Broccoli Soup Recipe

Thick and packed with flavours, Broccoli soup is an easy recipe that serves as a healthy starter. With addition of herbs and spices, especially garam masala, imparts a delicious freshness to the soup along with the fragrant aroma of Indian spices.
Ingredients
- 1 large Broccoli head, Florets removed, stalks peeled and cut into 1 inch pieces
- Olive Oil
- 1 Clove Garlic, minced
- 1 medium sized Carrot, diced
- 4 Cups Water or vegetable Stock
- ½ tsp Cee Pee Garam Masala
- 1/8 tsp Cee Pee Kashmiri Lal Mirch Powder
- Salt to taste
- Cee Pee Black Pepper to taste
Method
- In a pot, heat some olive oil and add the garlic. Turn the flame to medium-low and cook the garlic until you smell it.
- It will take about a minute. Once cooked add carrots and cook for other few minutes.
- Next, add broccoli, stems, water, salt, pepper, chilli powder, and garam masala. Mix it well and cover the pot with lid.
- Let it cook for another 15 to 20 minutes or until broccoli and carrots are cooked but not mushy.
- Now pour the mixture into blender and blend it into a smooth paste.
- Pour the soup back into pot and warm it to serve immediately or chill it in refrigerator to serve cool.
- Prepare bread croutons serve along with the delish soup.
