Veg Biryani Recipe

Veg Biryani, a spiced rice dish is prepared both with vegetables as well as with meat. Served at family dinners and every big and small occasion, it is often a star dish loved by all. A spoonful of biryani is enough to tempt anyone with its delish aroma and layers of spices flavour.
Ingredients
- 4-5 tbsp cooking oil
- 1 large Onion, sliced lengthwise into thick strips
- 5-7 fresh Curry leaves
- 1 medium Tomato, chopped
- 1 cup Basmati Rice
- ½-cup Green beans cut in to 2-inch pieces
- 1 medium Carrot, peeled and cut in to 2-inch pieces
- 1 medium Potato, peeled and diced into 2-inch pieces
- 1 tsp Cee Pee Red Chilli Powder
- 1 tsp salt
- 2-cups Water
- 1/2-cup Coriander Leaves, chopped
- 1 tsp Cee Pee Shahi Biryani Masala
- 1 tsp Cee Pee Garam Masala
Method
- Begin with heating oil in a large pot at medium heat. Put in onion, curry leaves, and cook until onion is dark brown for about 12-15 minutes while stirring occasionally.
- Add tomato, mix and keep stirring occasionally for 3-5 minutes or until tomatoes are soft.
- In the meantime, wash and soak rice in water to the brim for 10 minutes. Drain the water later.
- Add all veggies carrot, beans, potatoes, peas, along with chilli powder, shahi biryani masala, salt, garam masala to the onion mixture. Cook it for 2 minutes while stirring occasionally.
- Add drained rice, water and bring it to a boil. Cover the pot, and cook it on low heat for around 30 minutes or until the water is absorbed.
- Add coriander leaves, mix with light hand and cover for 5-10 minutes before serving it hot.
